Deviled eggs are the easiest thing you can ever make! Well second easiest after boiled eggs… But you get what I mean.
Even though these small ovals of deliciousness are really high on cholesterol, they are high on protein and have 0% carb! Perfect for a post workout snack.
There are so many recipes for deviled eggs, but this one is by far the easiest and is quite delicious too!
Boil some eggs, as much as you need, in salted water. When the water starts to boil, keep cooking them an extra 10 minutes if like me, you like your yolk well cooked.
After they are done, run them in cold water then peel them and cut them in half. Set aside a half or more for the avocado sandwich.
Move the yolk to a small bowl, add salt, black pepper, white pepper, onion powder and paprika to your taste. Then add yellow mustard and mix it all together.
With a spoon fill the egg whites with the yolk mix. Add a sprinkle of paprika and thyme (optional). Top them with a little dash of coriander if you like too.
You can also top them with smoked salmon for a fancier take. Totally delish!
As for the sandwich, spread some avocado on toasted bread, or even guac for extra flavor. Cut the remaining eggs in small pieces and scramble them on top of the sandwich. Add salt and any kind of pepper you like and even a little dash of hot sauce for a tangy twist. As easy as this!
You can boil the eggs at night and prepare them in advance for a easy quick yet delicious breakfast the next morning.
