Ultimate Homemade Gourmet Pizza

I love a good homemade gourmet pizza!

Don’t get me wrong, I still lust over delivery from the super cheesy, super oily Pizza My Heart, but a good homemade pizza is just something else.

This is rather a gourmet pizza, not your typical pepperoni or four cheeses. But trust me it’s much, much better than what you’re used to. You can save this recipe for impressing a certain someone *wink wink* or if you’re like me just to stuff your own face with delicious food.

R was out of town, so I decided to treat myself to a mascarpone and prosciutto pizza while watching Audrey Hepburn stealing not only a sculpture but all the attention in “How To Steal A Million” (highly recommended btw). Recently I have been loving spending nights all alone watching old movies, specially ones with Audrey Hepburn. What an amazing and classy actress!

Anyway, back to our succulent pizza, the ingredients are pretty straight forward.

– 1 pizza dough. I love making my own dough, so if you are like me here’s a recipe for you.

– 1/2 cup mascarpone cheese. It is the cheese used for tiramisu, but you can substitute it with ricotta cheese.

– 1 cup shredded parmasean or Italian mix. (I use the Italian mix, that’s just me though)

– 2 oz prosciutto (coppa ham would also work)

– 2 tbsp olive oil + enough to brush the crust

– 1 cup arugula

– 2 tbsp shallots

– 2 tbsp lemon juice

– Salt & pepper

Preheat the oven to 450 degrees for about 20 minutes so it’s super hot and steamy, then place the pizza dough either on pizza stone (if you have one) or a baking sheet. Bake it for 8 minutes.

PS: Don’t forget to poke holes in your dough with a fork before baking it. The holes prevents it from puffing up.

When baking the pizza, mix the olive oil, lemon juice, shallots, arugula and salt & pepper in a small bowl and put it aside.

Remove the pizza from the oven, turn it over, and brush the sides with a little olive oil so it crisps well. Then sprinkle the parmesan all over. With a spoon make small balls of mascarpone cheese and lay them on top. You don’t need to spread them, the heat in the oven will do it for you

Put the pizza back in the oven for about 6-8 minutes, until it’s golden and bubbly.

Lay the prosciutto on top and toss the arugula mix on them. Et Voila!SONY DSC SONY DSC

Move to a serving plate and enjoy it while hot & sizzling with a bottle of an ice cold beer, just like how a pizza should be enjoyed!

If you don’t want to use all the arugula mix on the pizza , you can have it as a side salad. So what are you waiting for? Hop on and get your baking on!
