Thai Coodles recipe

Coodles (courgette “zucchini” noodles) are the new noodles! These babies are replacing Asian noodles & Italian spaghetti for a healthier take on your favorite recipes.

To stay in the same spirit of my previous Thai recipe post, I decided to share a healthy recipe for thai style noodles. This recipe is free of all the carbs and calories of noodles and full of freshness and deliciousness. This is the perfect meal for a light, nutritious, quick lunch.

The ingredients required are:

– 2 zucchinis

– 1 carrot

–  Any type of protein you like (ex: seafood mix, chicken or tofu)

– 1/4 cup chopped coriander

– 1/4 cup chopped green onions

– 1/2 crushed peanuts

– a few mint leaves

Sauce:

– 1.5 tbsp peanut butter

– 2 tbsp soy sauce

– 1 tbsp jalapeno (optional)

– 2 tbsp  lime juice

– 1 tsp shredded ginger

– 1 tsp minced garlic

First start by “spiralizing” the zucchinis and carrots to form the coodles. For that you need a spiralizer like this one. You can buy them from Amazon or even a convenience store.SONY DSC

Meanwhile cook your protein, whether it’s seafood, chicken or tofu. In a large bowl, add the zucchini, carrots, chopped green onions, mint and the coriander. Then toss the protein to the mix.

In a small bowl mix all the sauce ingredients thoroughly. You’ll have to whisk the peanut butter vigorously so it dilutes properly into the sauce. It’s ok if it stays a little clumpy, it will mix well later with the coodles. SONY DSC

Add the sauce to the coodles and mix accordingly. Pile on a serving plate and sprinkle the crushed peanuts on top. You can garnish the dish with little bit of coriander if you like. SONY DSC SONY DSC

This is  an incredibly easy and healthy recipe. It’s full of vitamins, fiber and protein without the several hundreds calories and very little carbs… almost none! Hurray!!
