” Beirut’s Nights ” Sweet

Today I thought I’d satisfy your sweet tooth with a recipe from my country, Lebanon. It is something like pudding with fruits and topped with whip cream, sounds delish right? And guess what, it is as easy to make as Jello. Well probably a bit more, but trust me it is super easy!

This recipe is for 4 servings. You will be needing:

  • 2 1/2     cups of milk (either full-cream milk or low-fat milk, but not skimmed milk)
  • 1/2 cup corn flour
  • 2 1/2 tbsp sugar
  • 1 tbsp rose water
  • 1 tbsp vanilla
  • 1 tbsp lemon zest
  • 2 large bananas
  • 2 cups of chopped strawberries
  • 1/2 package dry whip cream mixture
  • 2 tbsp of honey (optional)

Prepare the whip cream as shown on the package and put in the fridge.

Then pour the milk in a pot on a medium – high heat and add the sugar, rose water, vanilla and lemon zest and mix well. Then slowly add the corn flower while whisking continuously. In about 5 minutes the mixture begins to boil and to thicken; during this time, reduce the heat and keep mixing continuously until it’s thick enough (it becomes like a pudding)

Pour the thickened mixture in a glass pan (approximately 14 inches X 9 inches). Then slice the bananas and layer them over the pudding. Push them with the tip of the knife so they sink in the pudding as this will protect them from turning black-brown.Set it aside to cool completely, then spread the chopped strawberries on top.

Add another layer of bananas if you want and then pour evenly the honey on the fruits.Now take the whipped cream and spread it on top evenly. Put the pan in the fridge for a couple of hours, then before serving you can sprinkle some unsalted pistachios, some shredded coconut or nothing at all.
