Two Easy Low Calorie Side Dishes

Are you bored of the same side dishes over and over again? I got two new and delicious recipes that are low calorie and extremely easy to make. In addition you probably have all the ingredients in your fridge too. A win-win situation!

Put your apron on and let’s get cooking.

The first recipe is  a no-butter / no-milk mashed potatoes. One serving is around 220 calories! See you don’t need to sacrifice good taste when dieting. For this dish you will be needing:

  • 1 medium potato
  • 1/2 tbsp olive oil
  • 1 chopped green onion
  • 5 fresh mint leaved minced
  • 1 tbsp dried mint leaves
  • salt & white pepper
  • 1 tsp chopped Jalapeño (optional)

So start by peeling the potato and chopping it into medium cubes. Add the cubes to a pot filled with 3/4 water and add pinch of salt. Cook them for around 10 minutes or until cooked well on a medium fire. When done, drain them and mash them in a bowl. If I am making a small amount, I usually mash them using a fork.

After you mashed the potato well, add the chopped mint leaves, green onions, Jalapeño and olive oil.  Mix all the ingredients well, than add the salt & pepper, and the dried mint leaves. Mix everything well and it’s ready to be served! Move it to a serving dish and garnish it with some mint leaves.

This second recipe is my mom’s, she used to make it quite often. She loves it and so do I. It’s very nostalgic to me, it reminds me of those beautiful moment that I used to share with my mom. I can’t wait to see her this summer. Anyway, back to our recipe, the ingredients are the following (for 1 serving) :

  • 5 chopped medium white mushrooms
  • 1 1/2 cup of coriander
  • 3 minced garlic cloves
  • 1 tbsp It’s Better Than Butter
  • pinch of salt & white pepper
  • 2 tbsp dry white wine (optional)
  • 1 tbsp lemon juice

Heat a pan on a medium fire and add the butter. After the butter melts, add the garlic and stir. Wait until they are golden, then add the coriander. Keep stirring for a minute or so, then throw the mushroom into the pan.

Coat them well with the coriander and garlic mix, cook for about 3 minutes while stirring. Add a dash of salt and white pepper than pour the white wine. Cook for about another 5 minutes, then turn the heat off and pour the lemon juice. Et voila! enjoy it while it’s hot.

So next time you are making a steak, chicken or fish, substitute the boring steamed veggies or the traditional mashed potatoes with these two mouthwatering and easy recipe.
