Basil Tomato Pasta

This is probably one of the easiest and most delicious pasta recipes that I know. Ready in about 15 minutes, with little labor, there is no reason not to try it.

All you need is the following:

  • Pasta
  • Hand-full of cherry tomatoes
  • A few basil leaves
  •  Two garlic cloves
  • Olive oil
  • Red Wine
  • Salt & Pepper
  • 1/3 Jalapeno (for those who like me loves some spice in their food)

Yup, that’s all that you need and nothing more! Not just it’s easy to do, it will also help you stay on budget. Win Win!

In a medium pot, fill 2/3 with water and  a dash of salt, some olive oil and the pasta. Cook around 10 minutes or until it’s done. In the meanwhile, chop the jalapeno and garlic very finely. In a pan, add 2 tbsp of olive oil and cook the garlic and jalapeno on a medium high fire. Cut the cherry tomatoes in half and drop them in the pan. Cook them for around 3 minutes before adding the pasta (don’t forget to strain the pasta before adding it). Add the salt & pepper to your taste.

During this time, keep stirring them from time to time, and pour yourself a glass of wine, you deserve it! Add a drop or two of red wine in the pasta, it will give it a great taste believe me!

Cook for 2 minutes, then add the chopped basil to the pasta. Why not have your own basil plant like I do? I am a big fan of plants in the house, specially those that you can use them in your cooking. Basilina (our Basil plant) was a perfect addition to our plants collection. It gives the house a great smell and we use it all the time in our food. In the pasta, the salads, or just sprinkle it on watermelon cubes for a great refreshing snack!

Leave the pasta for an additional 2 minutes and voila! Your delicious basil tomato pasta is ready to be devoured.
