Asian Shrimp Salad

Everyday I try having a salad for lunch, it’s healthy and nutritious with few calories. Beware though not every salad i slight. Some of them are as heavy as two big Macs. You should pay attention to the type of dressing you are using as they can contain tons of fat. Stay away from mayo & ranch dressings and opt for lighter choices such as vinaigrette, lemon & olive oil ect…

I had some shrimps in the fridge today so I made a delicious Asian shrimp salad and thought I’d share it with you guys. It is very simple, easy and takes such little time. What more can you ask for? It is perfect to take to the office or to serve at dinner alongside a meal.

For this delicious salad you will be needing :

  • 1 cup of chopped red cabbage
  • 1 cup of baby spinach
  • 1 cup of lettuce
  • 1 small red pepper
  • 1 small orange pepper
  • 1/4 cup of chopped coriander
  • 1 tbsp of chopped ginger
  • 1 tsp of chopped garlic
  • 1 lime squeezed
  • 2 tbsp of low sodium soy sauce
  • Pinch of red chili flakes
  • 1 tbsp of sesame seeds
  • 6 shrimps cooked
  • 1 tbsp of low fat peanut butter ( optional )

Chop the red cabbage, lettuce and the peppers. In a medium bowl, mix them with the baby spinach then put aside. In a small bowl add the soy sauce, lime juice and chili flakes. Mix in well the peanut butter until it dissolves in the sauce. Then chop the coriander, garlic and ginger. Combine them to the sauce and stir. Pour the dressing on the chopped greens and add some sesame seeds. Blend them well and lay the shrimps on top (you can always mix the shrimp with the salad).

Voila! The salad is ready to be devoured. Easy and delicious!

You can serve this salad along side some noodles for your family on your next asian dinner night. It is fresh, crunchy and tasty!

You can always skip the chili if you can’t handle spicy food. Remember no recipe is perfect. Alter each recipe to your specific tastes. I never follow a recipe exactly as it is. I always like to play with the ingredients a bit and personalize the recipe to my preferences. I encourage you to do the same I am sure you’ll like it better than the original. Don’t do major changes though, if the recipe indicates Cocoa don’t replace it with Salmon! Be smart with the changes.
